Cookies!

These gluten-free vegan cookies are specially decorated for Saint Patrick's Day. I used royal icing in bright colours to bring a fun theme to these Almond Sugar Cookies. 



Making baked goods that are free of both gluten and any animal products can be a challenge, but these cookies turned out very well.

Some replacements I used:
  • rice flour
  • almond flour
  • ground chia seeds instead of egg
  • vegan margarine instead of butter
The luck of the Irish seems to be in these cookies!
